Overview of new franchises at BUYBRAND EXPO 2025
One of the trends of 2025 in public catering was the growing popularity of soft drinks, in particular, bubble tea and coffee, and with chewable balls of tapioca and Chinese matcha, which is made on the basis of green tea. According to INFOLine's calculations, as of the end of 2024, the number of match points, bubbles and milkshakes in Russia has increased by 14% over the year. The 2GIS study confirmed that the trend has continued this year: from July 2024 to July 2025, the total number of bubble and fresh bars increased by 16% in large cities alone. At BuyBrand Expo, new concepts in this segment will be presented by Double Bubble Tea and Chu Chu Tea.

The second and third trends together — street food and national Russian cuisine - were absorbed by the franchise of homemade craft food "Borscht in a pie" from St. Petersburg. The guys really figured out how to combine various soups with pies and bread in a convenient form for consumption on the go. Borsch will bring its pink food truck with borscht, pies and other goodies to the exhibition.

Another new St. Petersburg street food franchise will be shown by the Three Ribs chain, which is currently present only in the Northern Capital, but is aiming to other regions.

An interesting newcomer from Moscow is Pancho Pizza. The concept combines Italian and Mexican cuisines, which are not so common in the Russian market. The franchisor has more than 20 years of experience in the catering market, establishments operate in a premium format. The franchise price is consistent. If you can launch your own bakery with a starting capital of 3 million rubles, then it will take at least 48 million rubles to launch Pancho Pizza.
